I often drink a smoothie for lunch during the summer.
This is my latest creation…with tastes of coconut, mango and banana it's like Hawaii in a glass. Now I just need some ukelele music and a beach and the illusion will be complete.
Ingredients:
1 tbsp hemp hearts (protein)
1/3 cup frozen mango pieces
1/2 frozen banana
1/2 cup soy milk
3 pieces of kale
1/4 cup coconut yogurt
Blend until smooth.
Makes enough for one.
If you find it is too thick, just add a bit more soy milk.

Is the coconut yogurt soy yogurt or regular dairy yogurt?

That looks so good Suzanne. I have never been able to eat a liquid breakfast, lunch, or dinner. For some reason I need to chew things in order to feel full, lol.

I almost always have a smoothie for breakfast. Must pick up a package of frozen mango so I can make this one. Delish! And, I’ll be sure to put on my Hawaiian music.

I just use regular Greek yogurt, but if you prefer soy yogurt I’m sure that would work too.

I’m like that in the winter. In the summer when it gets hot I don’t mind a liquid lunch.

Oooo, that’s a good one. I do something similar in the mornings before work with kale, frozen blueberries, flax, soy or almond milk, a banana, and a teensy bit of vanilla. Fast nutrition!
