With the quick change in the weather I've gotten the urge to start doing a little baking. Seems as soon as the weather gets a bit chilly my body wants soup, apple pie and basically anything warm, spicy and chalked full of carbs. I saw this recipe on Pinterest for Pumpkin Pull Apart Muffins and my stomach started growling right away. YUM!
So yesterday I decided to make my own version. I'm calling them Pumpkin Pecan Spice Buns. It's a bit wordy…PPSB for short : )
Instead of layering and cutting up the dough once the filling is on I rolled them like a regular cinnamon bun and baked them in muffin tins. Also I added some chopped pecans to the filling. I skipped the extra layer of sugar and rum sauce at the end. They were plenty sweet enough without piling on yet more sugar. They turned out delish. The addition of pumpkin to the bread dough makes them extra moist.
I had to freeze most of them right away, otherwise one made it into my mouth…then 2…and the third was perilously close before I shoved it in a ziplock and threw it in the freezer. Now I remember why I try not to bake so much.
