This is my own take on a summertime cocktail.
You will need:
good handful of fresh mint
1 lime, zested and squeezed
1-2 tbsp sugar
1 large bottle carbonated water
ice cold vodka ( you can use vanilla flavoured vodka for a little extra kick )
pestle and mortar
This recipe makes enough for 2 but you can double or triple it as required.
Simply put the fresh mint, sugar, lime juice and zest into the mortar and pound and muck it about with the pestle until the sugar has dissolved and the mint has surrendered all of it's lovely oils. It should smell really good in your kitchen right about now.
Put two ice cubes in each glass and pour over 1.5 ounces of vodka.
Take the mint mush in your hand and squeeze out all the juice in the mortar before discarding the mint leaves. Pour all the yumminess from the mortar split between the two glasses. You'll just have an ounce or two but believe me it's potent.
Pour in the carbonated water to almost fill the glasses and top off each glass with a wedge of lime and a sprig of mint. Now sit back, put your legs up and enjoy!
If it's too early in the morning for vodka you can make this without any alcohol and it is still excellent.
