Have a craving for something sweet, salty, cruchy and carbie?
Say it with me now… n-o-o-d-l-e salad.
Yuuuuum!
This spicy salad is loaded with fresh veg, healthy carbs and protein.
It's not about the healthy ingredients though…it's all about the poppin' flavours.
I love just letting loose in the kitchen and my newest experiment did not disappoint. Wash it down with a nice bottle of sparkling water and a splash of lime and you will feel like you've just spent the day at the spa.
Salad Ingredients:
1 pkg buckwheat noodles cooked, drained and rinsed
1 yellow pepper sliced into bite size sticks
1/2 English cucumber cut in half and thinly sliced
1 package of sugar snap peas tipped and tailed
2 green onions sliced fine
1 cup of shredded cooked chicken
Garnish:
fresh mint torn
1/4 cup of peanuts roasted and roughly chopped ( I buy them raw, keep them in the fridge and then just roast what I need quickly in a dry frying pan)
Salad Dressing:
3 tbsp low fat/calorie peanut butter
skin zested and juice of one lime
1 tbsp rice wine vinegar
3 tbsp soy sauce
1 or 2 (depending on spicy you like it) jalapeno pepper minced fine
1 clove garlic minced fine
1 tbsp fresh or frozen ginger grated
Method:
1. Mix all dressing ingredients in small bowl and whisk until smooth ( you may need to add a bit of water to thin).
2. Toss all salad ingredients together and then coat well with dressing.
3. Sprinkle on garnish.
Makes enough for 4.
If I had a fresh ripe mango when I made this I would have added it as well.
